This recipe is one of my favorites to bring to parties not only for the healthy benefits, the quick preparation time (if you know how to cut parsley efficiently that is – had to You Tube that a few times),awesome taste, but also because no one has ever heard of Adzuki beans. And that makes me look oh-so knowledgeable. Okay maybe not the knowledgeable part! For this recipe, you will have to head on over to your nearest health food store for the beans.  It’s worth it as they are a great sweet tasting small-sized bean that can be added to many dishes. In Japan, they are often used in confectionary dishes!

Ingredients:
1 tbsp apple cider vinegar
juice of 1 lemon
2 tbsp extra-virgin olive oil
3 cloves garlic, minced
1 shallot, finely diced
1/2 tsp sea salt
1/4 tsp ground black pepper
1/4 tsp cumin
1/4 cup dry adzuki beans
2 medium tomatoes, seeded and diced
1/2 -1 cup chopped parsley, lightly packed (if you love parsley go for the larger amount, otherwise I think 1/2 cup is plenty)

Directions:
Soak beans overnight. The following day, cook on medium heat for approximately one hour.
In large bowl, whisk together the cider vinegar, lemon juice, olive oil, garlic, shallot, salt, pepper and cumin.
Add the beans and tomatoes and stir to coat.
Add the parsley and toss well.
